White truffle is harvested from September to January, it is very difficult to identify because it grows up till to a meter deep. Its ideal habitat is the land located at altitudes ranging from 100 to 500-600 m above sea level, rich in vegetation, humid, with little sunlight, near water courses or in woods with natural right level of humidity. The tree species with which it coexists are oaks, willows, hornbeams, lime trees and poplars. The internal part, called gleba, is characterized by a colour that goes from powder pink to intense pink, almost brown, with very thin veins. The external part, called peridium, is smooth, with a colour that changes from light yellow to ochre depending on the place of harvest. With an unmistakable flavour, sweet but intense, velvety but decisive, each specimen of white truffle is always “unique” because, as a natural product of the wood, each one is the result of the microclimate that creates it.
