Ingredienti per 4 persone:

  • 800g di cardi
  • 50g di tartufo Tesori del Matese
  • 4 uova
  • 1dl di panna liquida
  • 4 cucchiai di grana grattuggiato
  • 1 presa di noce moscata grattuggiata
  • il succo di 1 limone
  • 30g di burro
  • sale e pepe

Mondate i cardi, lavateli e tagliateli a pezzi lunghi circa 5 centimetri; fateli cuocere per circa 10 minuti in abbondante acqua bollente salata e acidulata con il succo del limone.

Scolateli e metteteli con il burro a fiocchetti in una teglia larga, munita di coperchio e adatta alla cottura in forno; lasciate cuocere per circa 5 minuti, su fuoco basso e a recipiente coperto, bagnando con poca acqua quando è necessario.

Sbattete le uova in una terrina, salatele, pepatele e amalgamatevi il grana, la panna e la noce moscata.

Togliete dal fuoco i cardi, versatevi sopra il composto e cospargete il tartufo Tesori del Matese tagliato a scagliette.

Infornate a 180°C per 5 minuti e servite.
