Bianchetto truffle (Tuber borchii Vittatini)

Bianchetto truffle grows on rather fresh calcareous-clayey soils. Plants that favour its grow are broad-leaved and coniferous trees, therefore pines, beeches and downy oaks. It never reaches large dimensions, at most it can weigh between 40-50 grams. The internal part, called gleba, is initially whitish then become tawny and then purplish brown. The external part, called peridium, is smooth, dirty white in the younger specimen and takes on darker tone with rusty spots at riping. It has a rather strong and slightly spicy flavour: garlicky hints prevail both at taste and at smell.
