Black summer truffle (Tuber aestivum Vittadini)

It is the most widespread truffle in Central Italy because the microclimate of these areas is ideal for its growth. Black summer truffle is harvested during the summer, at varying altitudes, on soils rich in calcium near oak, hornbeam, pine, ash, beech and hazel trees. The internal part, called gleba, is light, colour can vary from light hazelnut to brown and is crossed by numerous white veins. The external part, called peridium, is brownish-black colour, characterized by large, sharp, pyramid-shaped warts that are clearly visible. At riping, it smells of characteristic scent that recalls that of mushrooms.
