Black muscat truffle (Tuber brumale var. moschatum De Ferry)

Black muscat truffle is harvested from December to March, it has a wide distribution area, in fact it grows at an altitude ranging from 70 to 1200 meters above sea level, mainly in soils rich in carbonates, fresh, deep. The symbiotic plants associated to this truffle are numerous and the most important are: black hornbeam, hazelnut, beech. The internal part, called gleba, is initially greyish colour, then become black at riping. The external part, called peridium, is black colour, with small flattened warts and is easily detached from the gleba with finger pressure; it is furrowed by evident whitish veins, well-spaced apart. The characteristic smell is pungent, recall musk and nutmeg.
