Black autumn truffle (Tuber uncinatum Chatin)

Black autumn truffle is harvested during autumn until the end of winter. It is harvested at high altitudes, from 1000 to 1300 m above sea level, in humus-rich and clayey soils, located in very humid, shaded and cool areas. Turkey oak and beech are the preferred symbiotic plants. The internal part, called gleba, is hazelnut-coloured tending to dark brown with light branched veins. The external part, called peridium, is warty, black in colour, with poorly developed warts. It has a pleasant and strong flavour, reminiscent of the scent of porcini mushrooms and hazelnuts.
